Piña Colada Protein Cake

 

4 eggs

150g cottage cheese

100g whey protein powder, Vanilla flavour

100g coconut flour

15g - 20g baking powder

500g pineapple, canned

 

Drain the pineapple, then purée in a food processor. Beat the eggs until foamy, then add the cottage cheese. Mix the protein powder with the baking powder and coconut flour. Gently fold into the mass. Add the puréed pineapple. Mix well. Fill into a silicone baking form. Bake in a preheated oven at ~150°C for about 1 hour or a bit longer.
